制作
1. 将牛肉洗净血水,凉水下锅,待水开后焯10分钟,捞起冲净,将焯过的水冷却后,用细筛网或纱布过滤,滤过的水再次让其沉淀,再次过滤,用过滤的水来煨牛肉(焯过牛肉的水经过过滤后才是牛肉的原汁,这样煨出的牛肉味道更加鲜美);

2. 将牛肉置入砂锅内,水要浸没牛肉,原来焯过牛肉的水不够的话,再加入凉水(水要一次性加足,中途不要加水,否则会影响汤的质量,煨任何汤都是这样),放入八角、香叶、生姜、白蔻、葱段、料酒,用大火烧开,撇去血沫,改文火煨制一小时,捞出牛肉让其冷却,切片;

3. 将白萝卜洗净,切成滚刀块,下入牛肉汤中煮至软烂,加入盐、鸡精调味;

4. 在另一锅中加水,烧开后下入拉面,待面条熟后捞入碗中,浇上牛肉汤,浇少许辣椒油,撒上香菜、胡椒粉即可。
